Chef & food My food story— —August —’24 42 Braised Short Rib Sweet Potato Grits Indulge in the exquisite harmony of slow-cooked Korean–inspired short ribs, marinated to perfection, served alongside creamy sweet potato grits, delivering a culinary experience that is both comforting and unforgettable US INGREDIENT(S) HIGHLIGHTED Beef, red wine, sweet potato, orange juice, and tomato paste CUISINE Korean– Southern Fusion PREPARATION TIME 45 minutes COOKING TIME 3 ½ hours SERVES 8 people DIETARY Non-vegetarian LEVEL OF DIFFICULTY Moderate Ingredients: 5 pcs short ribs, bone-in 3 cups red wine, cabernet 3 ltrs beef stock, unsalted ¼ cups blended oil 2 cups soy sauce, low sodium ½ cup sesame seed oil 2 pcs Asian pear, deseeded ¾ cups orange juice 2 tbs brown sugar 2 pcs oranges, for zest and peels 1 pc lemongrass stock, smashed 30 gm ginger, smashed 7 pcs scallions, cut in half ¼ cup toasted sesame seed ¼ cup fish sauce 1 ltr water ¼ cup tomato paste ¼ cup gochujang 2 pcs bay leaf SWEET POTATO GRITS 900 gm sweet potato 4 cups water 2 tsp kosher salt 1½ cup uncooked yellow grits 3 tbsp butter Method: a. Preheat oven to 375°F. b. In a large pot heat some oil and sear the short ribs until brown on all sides. c. Once the ribs are brown, remove them from the pot and set aside. d. Pour the used oil out and return the pot back to the stove and heat over med-high heat. e. Pour the remaining oil, and add Asian pear, lemongrass, ginger, and scallion, and allow them to cook for a few minutes. f. Follow that with tomato paste and gochujang. g. Add red wine and deglaze for about 4 minutes. h. Add stock, orange zest and juice, soy sauce, sesame oil, fish sauce, brown sugar, sesame seeds, and 2 cups of water, and bring to a simmer. i. Add the short ribs and bay leaf into the liquid. j. Cover the pot and place in a 350°F oven to braise for 3½ hours or until tender. k. Once done, remove it from the oven and let it cool down. l. Remove the short ribs from the broth, strain, and cook to reduce the liquid by half. SWEET POTATO GRITS a. Rinse the sweet potato to remove any dirt and prick with a fork. Wrap the sweet potato in aluminum foil, and place in the oven at 375°F for 40 minutes. b. Gently squeeze the sweet potato
