In this recipe, they undergo a delightful transformation into mouthwatering tacos US INGREDIENT(S) HIGHLIGHTED Beef, pork, cotija cheese, eggs, and olive oil CUISINE Mexican PREPARATION TIME 15 minutes COOKING TIME 1 hour SERVES 5-6 people DIETARY Non-vegetarian LEVEL OF DIFFICULTY Moderate Ingredients: 4 pcs poblano peppers 226 gm ground beef 226 gm ground pork ½ cup seasoned breadcrumbs ½ cup carrots, minced ½ cup white onion, chopped 6 tbsp cotija cheese 2 large eggs ¼ cup cilantro, chopped ¼ cup fresh parsley, chopped vegetable oil SAUCE 6 garlic cloves, chopped 1 can (800 gm) crushed tomatoes 2 cups beef stock 1 pc chipotle pepper in adobo sauce 2 tbsp olive oil PLATING 10 pcs 4-inch corn tortillas 1 cup chipotle mayo 1 cup pickled onions ½ cup Cotija cheese, crumbled sprigs of cilantro Method: a. Roast poblano peppers using tongs over the stove top until charred. b. Cover the peppers in plastic wrap and place in a bowl of water to steam for ten minutes. c. Once steamed, remove the peppers from water and discard the plastic wrap. d. Remove the seeds and skin of the peppers, roughly chop and set aside. e. Take a large mixing bowl and add the ground beef and pork. f. Add the seasoned breadcrumbs, ¼ of the roasted and peeled poblano peppers, carrots, white onion, cotija cheese, eggs, cilantro, fresh parsley, and mix everything together gently. g. Roll the mixture into about 1-inch diameter balls and place them on a baking sheet or a large plate. h. Take a large skillet with vegetable oil heated over medium flame, and once hot, add the meatballs, going in batches to make sure they all get surface area on the skillet. i. Rotate the meatballs until they are browned on all sides. j. Once browned, remove from the skillet and keep aside to cool down. k.
