My Food Story Magazine

My food story— —August —’24 26 COOPERATORS Established in 1986, the Ginseng Board of Wisconsin (GBW) represents all Wisconsin Ginseng growers under a marketing order managed by the Wisconsin Department of Agriculture, Trade and Consumer Protection. The board focuses on research, national and international marketing, new product development, and education. American Ginseng, cultivated and wild-grown in Wisconsin, boasts numerous health benefits and holds significant historical and medicinal value in Native American and ancient Chinese practices. Wisconsin-grown American Ginseng is renowned globally for its bold bitterness and aromatic qualities, appealing to enthusiasts of black coffee, dark chocolate, arugula, and grapefruit. What sets Wisconsin-grown Ginseng apart is its ‘terroir’, a concept usually applied to fine wines, describing the unique flavor imparted by a specific natural environment. Central Wisconsin’s rich, fast-draining soil, gentle topography, and long cold winters create optimal conditions for producing a distinctly bitter and flavorful Ginseng. Growing Wisconsin Ginseng is labor-intensive and passed down through generations in Central Wisconsin. The crop takes three to four years to mature and cannot be replanted in the same soil after harvest, unlike other crops. Wisconsin Ginseng is not only valued for its taste but also for its versatility in products ranging from energy drinks and nutrition bars to teas, candies, and even alcoholic beverages. Its bitter profile complements a wide range of recipes, enhancing both sweet and savory dishes. Explore Wisconsin Ginseng to add a bold flavor and nutritional boost to your culinary creations, akin to dark chocolate or coffee, enhancing a variety of flavors with its distinctive bitterness. California Wines represents wineries across the state, renowned as the world’s fourth-largest wine producer. The state’s geographical diversity—from Mendocino County in the North Coast to the southern border—encompasses over 147 American Viticultural Areas (AVAs) and supports over 100 grape varieties, influenced by the Pacific Ocean’s cooling currents. California Winegrape Growers and Vintners prioritize climate-smart practices to leave the planet better than they found it. More than half of California’s vineyard acreage is certified sustainable, demonstrating their commitment to environmental stewardship. Innovations like electric tractors, LEED-certified buildings, and night harvesting reduce energy consumption and environmental impact. These initiatives ensure that California remains a leader in sustainable wine production on a global scale. Current initiatives focus on developing climate mitigation and adaptation strategies for winegrowers. These efforts include creating a ‘toolbox’ of resources, case studies, and training materials to expand climate-smart practices. Workshops and webinars will educate over 500 winegrowers, with communication materials reaching over 6000 growers, trade partners, and consumers. By empowering the wine community with knowledge and tools, California aims to enhance resilience against climate challenges while maintaining wine quality and diversity. The California Wine Export Program supports sales in over 30 countries through marketing and promotion activities. Based in San Francisco, the program provides essential data and expert guidance to help wineries enter new markets and succeed globally. By facilitating international trade and promoting California wines abroad, the program contributes to the ongoing prosperity and recognition of California’s wine industry as a global leader in quality and innovation.
