Mouli Practical Application: Usually used when dishes require uniformly mashed product such as in mashed potatoes, vichy carrots, pea puree etc. It can also be used to puree certain setwed fruit to create a chunky sauce, as in applesauce for example. Other names for the Moulis: Food mill, passatutto, purée sieve, moulinette, passe-vite What is it, how do you use it? A mouli is a hand-held device that allows you to puree vegetables. This tool/device includes a conical fixture that has a plate of varied sizes, all attached to a crank that helps push the cooked vegetables through the plate. It is a simple machine that can mash vegetables for a smooth texture. Safety Aspects: Most moulis come with 3 different grates to vary the textures that can be produced through it. It is important the vegetables are well cooked and are cut to a size which can go under plate of the crank. Very good moulis also have a clasp that will allow you to attach it to a large mixing bowl to avoid it from moving. How do you take care of it? It is important to clean it properly and dry it well before storing it. Each model will be slightly different and they all come with manuals that clearly state how it can be cleaned. Some are dishwasher safe but every model requires to be disassembled, cleaned, washed, sanitized and dried (preferably air dried) When you take apart the mouli, it is important to be very careful when handling the grates as it clips on to the conical portion of the device and tends to fasten and pinch your skin if not handles properly.
