Equipment Training: Small Equipment Training Aim: Understand the proper way to use equipment in a safe and efficient manner 1. Mandoline Practical Application: Usually used when dishes require uniformly sliced vegetables such as anna potatoes, potato chips, pomme gaufrette etc. It can also be used to slice vegetables thin for applications such as coleslaw and other dishes that require vegetables to be shredded. Other names for the Mandoline: Shredder, Vegetable Slicer, Slicer What is it, how do you use it? A mandoline is a device that allows you to slice vegetables and fruit quickly, precisely and (hopefully) safely. It is made up of a flat surface that is fitted with a sharp blade. The vegetable or fruit (with the safety guard on) has to be slid back and forth across the flat surface to achieve uniform slices. When you change the angle, and/or the blade type, many different types of interesting cuts can be achieved. Safety Aspects: Most mandolines come with a safety guard to protect your fingers from the blade. It is important the vegetable sits under the guard securely for even slices. Very good mandolins also have an antislip support to avoid any injuries due to the movement of the device. How do you take care of it? It is important to clean it properly and dry it well before storing it. Each model will be slightly different and they all come with manuals that clearly state how it can be cleaned. Some are dishwasher safe but every model requires to be disassembled, cleaned, washed, sanitized and dried (preferably air dried) When you take apart the mandoline, it is important to be very careful when handling the blade as it is very shard and can cause injury if left in the dishwasher unattended.

2. Mouli Practical Application: Usually used when dishes require uniformly mashed product such as in mashed potatoes, vichy carrots, pea puree etc. It can also be used to puree certain setwed fruit to create a chunky sauce, as in applesauce for example. Other names for the Moulis: Food mill, passatutto, purée sieve, moulinette, passe-vite What is it, how do you use it? A mouli is a hand-held device that allows you to puree vegetables. This tool/device includes a conical fixture that has a plate of varied sizes, all attached to a crank that helps push the cooked vegetables through the plate. It is a simple machine that can mash vegetables for a smooth texture. Safety Aspects: Most moulis come with 3 different grates to vary the textures that can be produced through it. It is important the vegetables are well cooked and are cut to a size which can go under plate of the crank. Very good moulis also have a clasp that will allow you to attach it to a large mixing bowl to avoid it from moving. How do you take care of it? It is important to clean it properly and dry it well before storing it. Each model will be slightly different and they all come with manuals that clearly state how it can be cleaned. Some are dishwasher safe but every model requires to be disassembled, cleaned, washed, sanitized and dried (preferably air dried) When you take apart the mouli, it is important to be very careful when handling the grates as it clips on to the conical portion of the device and tends to fasten and pinch your skin if not handles properly.

Vitamix Practical Application: Usually used when dishes require uniformly blended product such as in soups, sauces and smoothies etc. It can also be used to blend and powder roasted nuts and seeds to make nut butters. Other names for the Vitamix: N/A What is it, how do you use it? A Vitamix is a very powerful blender. Where a normal blender would help blend only till a certain extent, the powerful motor and blade design of a Vitamix blends to form the smoothest, silkiest liquid. Also, an added feature is that you can blend hot products immediately because you can even blend product in the vitamix with the lid off. The blades are cut in such an angle that as it blends it directs the food into the center of the jar rather than splatter it out. Safety Aspects: The Vitamix has various models and in all the models it is very important to clean each part thoroughly to avoid food safety issues in terms of cross contamination. How do you take care of it? It is important to clean it properly and dry it well before storing it. Each model will be slightly different and they all come with manuals that clearly state how it can be cleaned. They are dishwasher safe but every model requires to be cleaned, washed, sanitized and dried (preferably air dried). 4. Immersion Blender Practical Application: Usually used when dishes require to be pureed into a smooth consistency. It can also be used to emulsify sauces within the same pot that the sauce is made in. Other names for the Immersion Blender: Stick blender, hand blender What is it, how do you use it? An Immersion Blender is a handheld device that is commonly used to blend or puree ingredients within the container they are being prepared in or within a tall canister. This piece of equipment has 2 parts, namely; the metal shaft with a rotating blade which has to be in contact with the food and an electric motor that is attached to this shaft. Safety Aspects: When using an immersion blender it is important to make sure the shaft and the electric motor are attached securely and only then switch the motor on. It is also important to make sure that the dial of the blender is on its slowest setting to make sure that the product does not splatter everywhere. How do you take care of it? The only part of the immersion blender that can be washed is the metal shaft with the blade. The blades are sharp so it is important to be careful and also dry it well because otherwise the blades may rust. It is imperative to make sure that no water touches the electric motor because it may short circuit.

5. Food Processor Practical Application: Food processors are usually used to do certain processes quickly and efficiently for large volume production. It can also be used to bring together certain types of dough. Other names for the Food Processor: Food chopper, robocoupe What is it, how do you use it? Food processors have multiple uses in a kitchen and are one of the most versatile kitchen appliances. It can quickly chop, slice, shred, blend, puree and mince almost any ingredient. Some models can even juice fruits and knead dough by changing the attachments. Safety Aspects: When using a food processor it is important to make sure the blade is fitted properly and the cover of the food processor is fitted on snugly and only then switch the motor on. It is also important to make sure that the dial of the processor is on its slowest setting to be able to control the speed and force of the motorized blade How do you take care of it? All parts of the food processor can be washed except for the main electric motor. The blades are sharp so it is important to be careful and also dry it well because otherwise the blades may rust. It is imperative to make sure that no water touches the electric motor because it may short circuit.

6. Planetary Mixer Practical Application: Planetary mixers are usually used to do one of the 3 things that can be achieved using the attachments. They are usually used when a lot of product needs to be made to ensure consistency and to reduce the manual labour required. Other names for the Planetary Mixer: Stand mixer, Mixer, Vertical mixers, Cake mixers, By brand sometimes i.e (“KitchenAid” etc.) What is it, how do you use it? The planetary mixer is used mainly to prepare pastries, dough and other baking related products. They usually come with 3 classic attachments, namely; dough hook (for kneading of dough) paddle attachment (for creaming) and whisk attachment (for whisking). It replaces a lot of manual labour through mechanizing the process and allows for large quantities to be made with minimal human intervention which means consistent product achieved at the fraction of the time required. Safety Aspects: When using a planetary mixer, it is important to make sure the bowl is fitted properly only then switch the motor on. It is also important to make sure that the dial of the mixer is on its slowest setting to be able to control the speed and force of the motorized attachment. How do you take care of it? All parts of the mixer can be washed except for the main electric motor. The attachments need to be washed and dried thoroughly because otherwise they may rust. It is imperative to make sure that no water touches the electric motor because it may short circuit.

Equipment Training: Blast Freezer Aim: Understand the proper way to use a blast freezer efficiently Blast Freezer Practical Application: Usually used when dishes or items require immediate chilling or freezing. Blast chillers are used a lot in patisserie when different components are needed frozen to be able to put them all together. What is it, how do you use it? A blast chiller is essentially a freezer that chills the temperature of a food item rapidly to sub zero temperatures without forming large ice crystals. Most blast freezers have temperature settings to allow for cooling down to different temperatures within different time periods. Safety Aspects: Most blast chillers will have a display of important information pertaining to the current function selected, which means it will allow for the chef to see what temperature the blast freezer is reaching/ has reached. It also displays the current function that has been selected. How do you take care of it? While blast freezers may be larger in size and might seem difficult to break/ misuse, it is important that they are defrosted completely often enough so that the ice does not build up which may damage the cooling mechanism. Electrolux blast freezers also have built in drainage systems to allow for easier cleaning processes.

Equipment Training: Combi Steamer: Roasting and Baking Aim: Understand the proper way to use equipment in a safe and efficient manner Practical Application: There are many dishes that require roasting or steaming and using the correct oven function allows us to ensure that we cook the food item to the full potential. Within the main functions, of the oven there are other aspects that be selected to enhance the roasting and baking process. What is it, how do you use it? A Combi Steamer oven with the features of baking and roasting allows for dishes to be produced and cooked ensuring the utmost flavor is kept throughout the process without drying the food and with minimal time wastage. When using the Steam Bake option the oven must be preheated to ensure proper saturation whereas the Steam Roast function allows for immediate cooking without preheating. Safety Aspects: Combi Steam ovens have integrated door shield systems to allow for easy stop positions, ensuring the door does not hit into the user. The design of the door cavity makes loading and unloading items into the oven easier with minimal risk of injury. How do you take care of it? As with any other larger piece of equipment, it is important to maintain the cleaning of the oven so as not to let dirt and bacteria build up. This would include wiping up any spills in the oven as soon as it has been switched off and cooled down after use and generally giving the doors and inside a good wipe down after each use. Due to the type of mechanisms on the doors, they can withstand a lot more however it is important to still treat them with caution.

Helps preserve food quality: It removes the air that surrounds the food so it helps prevent bacterial growth and keeps the freshness for a longer period of time 2. Saves time and labour: The food can be pre portioned into individual bags and is usually used for sous vide cooking. This does 2 things; it helps keep portion control in check and allows for easy high volume cooking. 3. Saves money in the long run Food that is vacuum packed usually has a long shelf life and it increases the usability of the product for a longer period of time. What is it, how do you use it? A vacuum sealer helps remove air from around the food product and seals it within a bag using a heated seal to fuse the sides of the bag to prevent leakage. Safety Aspects: When you fill a vacuum bag it is important to fill it up only ¾‘s of the way up to avoid the pressure from building and the bag bursting. How do you take care of it? It is important to clean it properly and dry it well. Each model will be slightly different and they all come with manuals that clearly state how it can be cleaned.

Equipment Training: Pacojet Aim: Understand the proper way to use equipment in a safe and efficient manner Pacojet Practical Application: A Pacojet is used to make sorbets, ice creams, gelatos, cold soups, granitas and even some popular sauces like pesto (since chilling the basil will allow for the pesto to be a brighter green) Safety Aspects: Using a pacojet is very straightforward with minimal risk of injury or damage. However it is important to use with caution when moving the device as it is large and heavy. Pacojets have a sharp removable blade that can cause injury. What is it, how do you use it? A Pacojet is a kitchen appliance that helps puree frozen foods into a fine creamy texture – without thawing the product. How do you take care of it? The machine itself has to be sanitized and cleaned only externally but the jar, the metal canister and the blade can be washed in a dishwasher or manually. It is very important to dry the parts completely to avoid rust. The outside of the machine can also be wiped down from time to time to prevent dust build up.

Equipment Training: Combi Steamer: Steaming Aim: Understand the proper way to use equipment in a safe and efficient manner Combi Steamer Practical Application: There are many dishes that require steaming and using the correct oven function allows us to ensure that we cook the food item to the full potential. Within the main functions, of the oven there are other aspects that be selected to enhance the roasting and baking process. Steaming is also a healthier way to cook food and is preferred by most. What is it, how do you use it? Combi” is short for combination, as these ovens combine convection and steam cooking. The steaming function prevents cross flavoring which allows you to cook more than one item at a time. This is also a healthier function and cooks items faster. Safety Aspects: Combi Steam ovens have integrated door shield systems to allow for easy stop positions, ensuring the door does not hit into the user. Equipment Training: Espuma Gun Aim: Understand the proper way to use equipment in a safe and efficient manner Espuma Gun Practical Application: An espuma gun is great for sauces, light foams, and can even be used to aerate whipped creams. It also helps aerate batters for microwave sponges and create volume in certain products as required. Safety Aspects: It is important to make sure that the cartridge is completely released into the canister and removed. When the pressure is completely released, the canister should be shook and then the foam can be used. When opening the canister after use, it is important to have released all the pressure from the nozzle. What is it, how do you use it? An Espuma Gun was created by Chef Ferran Adria. He wanted to interpret the flavour of food in a new way. The canister is filled with a liquid and then charged with nitrogen cartridges to aerate the liquid. How do you take care of it? All parts of the espuma gun can be washed. The metal canister and the accompanying parts can be washed in a dishwasher or manually. It is very important to dry the parts completely to avoid rust. Equipment Training: Dehydrator Aim: Understand the proper way to use equipment in a safe and efficient manner Dehydrator Practical Application: A dehydrator is used to dry out foods to create items such as apple chips, fruit leathers, granola bars etc. It is important that foods with a higher moisture level be on a higher setting than those with a lower moisture level to ensure optimal usage. What is it, how do you use it? A dehydrator is a piece of equipment that can dry out food by circulating air at a very low temperature. The food must be placed on the trays in a single layer so that they can be dried out evenly. Safety Aspects: Using a dehydrator is very straightforward with minimal risk of injury or damage. However it is important to heed with caution when moving the device as it is large and heavy. Dehydrators have a fan inside the device that is usually covered with a safety covering so as not to cause damage. How do you take care of it? It is imperative that the shelves of the dehydrator are removed and cleaned thoroughly after usage so as not to let bacteria and dirt build up. Water should not be allowed inside the dehydrator so a damp dishcloth can be used to clean the inside if need be. The outside can also be wiped down to prevent dust build up.
